To Our Members!

I hope everyone has enjoyed their Summer. I say "enough of the high heat already" and let's hope that we get to keep this nicer weather for awhile. Speaking of "high heat" the new Zumba class is causing quite a "stir". I am getting great comments about how much fun everyone is having in the class. In fact, in case you don't know yet we have added a Monday 6:00 a.m. class and we had 16 members on the first morning!

We are very excited about the addition of Dave and Deborah of Quinn's Physical Therapy up on the third floor. They should be officially open for business September 7th. Not only are they very knowledgeable and experienced therapists, they are simply just great people!

I wanted to announce a small modification to our towel distribution. In an effort to cut down on our water consumption and support the Go Green Initiatives (as well as loss) we will soon distribute SMALL towels (only) at the front counter. Upon completion of the new shelves behind the front desk we will begin giving one towel to any member who requests one. Also, please try and limit your large towel usage to one or two towels. We really do appreciate the savings in labor and water consumption by making a few small sacrifices. For anyone who is curious, we lose approximately 400 small towels per month!

We added a new abdominal piece of equipment this week called the AB Coaster. I hope you give it a try but make sure to use it slowly and don't let it swing on you. If you're not sure how to use it properly, please ask one of our trainers to demonstrate it and ensure that you are using the proper form. Nothing like a "six pack" of abs! (As if I had them!)

We have started converting court four into a new Personal Training studio. In fact, we are looking to license the Crossfit workout in that space. So that could be an exciting addition to our club! We are also almost finished with our new carpeting in the Men's locker room. We have really appreciated everyone's patience and cooperation during the installation. I have had numerous members comment on how good it looks.

Even though we are in the midst of challenging economic times we are working to make your membership more valuable. Please keep San Jose Athletic Club in mind when thinking about ways for your friends and colleagues to enhance their social and networking opportunities. The best compliment you could ever give us is the referral of a friend. We definitely could use your help in recruiting new Members to the club.  Starting September 1st, we are offering a $75 gift certificate towards member services for referring a friend or a $50 certificate for adding a family member.

Thanks so much for your support of SJAC. There are many things that make the club a special place, and it is the membership and staff that creates the positive energy we all feel when we walk through the doors.

VEGATABLE CHOWDER

"A Tasty Alternative!"

This is a great seasonal chowder. Substitute any vegetables listed for those of your choice, depending on the season. The chipotle chili adds a unique smoky and spicy flavor to this soup. Remove the chili earlier in the cooking process if it is getting too spicy.

This chowder is packed with micro-nutrients! Tomatoes have a potent antioxidant in the form of a carotenoid called 'lycopene.' Lycopene may reduce the risk for prostate and other cancers. Cauliflower is an excellent source of vitamin C and B vitamins. Cabbage is rich in cancer-fighting phytochemical compounds. Yellow and red peppers have twice the amount of vitamin C as green peppers. Red peppers are an important source of beta carotene and beta cryptoxanthin and orange peppers are a top source of the carotenoid zeaxanthin. The skin of zucchini is rich in lutein and zeaxanthin which protect against cataracts and age related macular degeneration. Swiss chard is loaded with beta carotene and potassium as well as vitamin C, magnesium, vitamin E. It is very high in vitamin K which is essential for bone formation. Broccoli is another powerhouse of micro-nutrients. It supplies folate, riboflavin, potassium, iron, vitamin C, beta carotene and lutein.

INGREDIENTS:

  • 2 tablespoons olive oil.
  • 2 medium leeks, chopped.
  • 3 cloves garlic, minced.
  • 4 large, firm ripe tomatoes, peeled and chopped or 1 – 15 ounce canned tomatoes.
  • 1 dried chipotle chili.
  • 1 teaspoon ground coriander.
  • 3 cups chicken stock.
  • 1/2 head cauliflower, cut into bit-sized pieces.
  • 1/2 cabbage (1 pound) coarsely chopped.
  • 1 red bell pepper, cut into 1-inch pieces.
  • 1 yellow bell pepper, cut into 1-inch pieces.
  • 2 medium zucchini, cut into 1-inch pieces.
  • 1 bunch Swiss chard, rib diced and leaves cut into 1/2- inch strips.
  • 1 small head broccoli, cut into bite-sized pieces.
  • Kosher salt and freshly ground black pepper to taste.
  • 1/2 cup chopped Italian parsley.
  • 1/2 cup grated Dry Jack cheese.

DIRECTIONS:

In a large soup pot, heat the olive oil over moderate heat. Add the leeks and saute until soft, 3 to 5 minutes.  Add the garlic and cook 2 minutes longer.  Stir in the tomatoes with all their juices.  Add the chipotle chili, ground coriander, chicken stock, cauliflower, cabbage, red and yellow pepper and zucchini.  Bring to boil, cover, and cook over medium-low heat for 10 minutes. Remove the chili, if necessary, or allow to cook further until desired spiciness is reached.

  1. Add the broccoli and chard and cook another 5 minutes.
  2. Season to taste with Kosher salt and freshly ground black pepper.
  3. To serve, ladle soup into bowls and top with freshly grated Dry Jack cheese.
